UHP processing of whole ginseng.
UHP is an alternative to thermal or chemical processing, which can adversely impact the quality of food. Packaged foods enter pressure chambers in the UHP unit, after which the vessel is filled with water. Once the tank is filled, up to 600 MPa can be applied to the food.
